A planned food hall and restaurant incubator near LMCU Ballpark has cleared an important development hurdle.
Plainfield Township trustees approved changes to the property’s planned unit development on Sept. 14, allowing The Park Collective project to move forward at 247 Morrissey Drive NE in Comstock Park.
Developer Ibex Development Group plans to transform the former Tommy’s Boats showroom into a food hall with approximately four to five restaurants, a dessert or ice cream space and a centralized bar. Expect year round live music an Indoor/outdoor seating also.
The concept is intended to work partly as a restaurant incubator, allowing food entrepreneurs to rent space and equipment while developing their own brands.
Ibex has operated similar collective-style concepts in Cincinnati and Indianapolis.
The location sits just off US-131 near LMCU Ballpark and the White Pine Trail.
Township information says that, if development continues as planned, renovations could begin late in 2026 with an opening targeted for 2027.
That timing remains a target rather than a guaranteed opening date.
GRNO will be watching closely for construction progress and, especially, the eventual restaurant tenant lineup.
