A distinctive Grand Rapids-area food truck is making the jump to a permanent restaurant.
Montejo’s Cookhouse plans to open its first brick-and-mortar restaurant Oct. 10 at 128 28th St SW in Wyoming, taking over the former Bosna Express space.
Owners Jazmin Montejo and her husband, along with another couple, are transforming the 28th Street building into a Cuban restaurant centered around the food that built their mobile following — including Cuban-style pizza.
The Oct. 10 grand opening is planned to include live Cuban music.
From a food truck and converted school bus to a full restaurant
Montejo’s Cookhouse started as a family food-truck business.
The owners later spent roughly a year converting an old school bus into a dining area, creating one of the more unusual mobile dining setups in the area.
But Michigan winters created an obvious limitation for a business centered around outdoor/mobile service.
That eventually pushed the family toward something more permanent.
The new restaurant gives Montejo’s year-round space while allowing the owners to keep building the Cuban food concept they started with.
Cuban pizza is at the center of the menu
One of Montejo’s signature items is Cuban pizza, which Jazmin Montejo described as a personal-sized pizza with a flavor and preparation style inspired by pizza in Cuba.
The restaurant’s version features cheese cooked around the edge of the pan to create a crispy cheese crust along with a slightly sweeter sauce. Popular toppings have included ham, onions, pineapple and pepperoni.
The restaurant also plans to serve other Cuban dishes along with batidos, fruit shakes in flavors such as mango and guava.
A children’s menu is also planned.
The former Bosna Express gets a new life
Montejo’s Cookhouse is moving into 128 28th St SW, where Bosna Express operated before closing over the summer.
The owners have been remodeling the building with Cuban imagery, including photographs of Cuba and posters featuring Cuban musicians.
Their goal is to create a space that feels connected to Cuban culture rather than simply moving the food-truck menu indoors.
Grand opening planned for October 10
Montejo’s currently plans to hold its grand opening Saturday, Oct. 10, 2026, with live Cuban music.
After the grand opening, reported operating hours are expected to be 11 a.m.-9 p.m. every day except Tuesday.
GRNO will continue watching the restaurant’s official pages in case regular public service begins before the Oct. 10 celebration.
The original mobile operation isn’t necessarily disappearing either: the owners told WOOD TV8 they intend to keep the food truck and are looking for a place where it can continue operating regularly.
